Resistant starch is not a miracle ingredient. It is a fraction of starch that partly escapes digestion in the small intestine. Some can form when starchy foods are cooked and then cooled. The useful question is what this technique changes—and what it does not.
1. What cooling really changes
2. Which foods are involved?
3. A simple kitchen method
4. What can be said about blood glucose
5. What if digestion reacts badly?
06FAQ
01Must rice or potatoes always be cooled? No. Cooling is an option, not a condition for a balanced diet. Starchy foods can be eaten hot; wholegrain choices and potatoes with skin can also contribute fibre.
02Does reheating cancel the effect? Not necessarily, but the effect depends on the food, cooking and cooling. Studies do not support one universal time or temperature rule.
03Is this a diabetes treatment? No. One study does not replace medical care or justify changing insulin or medication.
