Cocoa is not interchangeable from one product to another. Variety, fermentation, roasting, alkalisation and cooking can change flavanols, while the cocoa percentage on the wrapper does not tell you how many flavanols you actually eat.

01Does 85% chocolate necessarily contain more flavanols? No. Cocoa percentage alone cannot tell you the flavanol amount.
02Does cooking destroy all flavanols? No. Losses depend on the preparation.
03Should I aim for 200 mg per day? That amount belongs to the EFSA-authorised claim; it is not an individual prescription or a guaranteed amount in an ordinary bar.
