Spinach has no single best preparation for every goal. Raw leaves keep a fresh texture; boiling, draining and discarding the water can remove some soluble oxalates.
1. Oxalates and cooking Oxalates can be soluble or insoluble. A review reports that water cooking may reduce soluble oxalate, but it does not provide a universal value for every plate. In a laboratory trial, boiling spinach for 12 to 15 minutes and discarding the water reduced measured oxalates.
2. Minerals: measurement is not a clinical benefit In a small human study, fractional magnesium absorption was lower with a spinach meal than with a kale meal; this does not provide a daily absorption rate for each portion. In an in-vitro study, blanching or cooking increased measured iron availability; this does not prove a clinical improvement in iron status.
3. A practical choice Alternate methods: use raw spinach for texture and minimal heating; boil and drain when oxalate reduction is the priority; use short cooking when taste and volume matter most.
04FAQ ### Does steaming reduce oxalates like boiling? Water contact is different; steaming cannot be assigned the same reduction observed when cooking water is discarded.
01Should everyone avoid spinach? No. Most people can include it in a varied diet with a suitable preparation.
